    A bright medley of greens and blossoms from the garden, lightly stir-fried to preserve their natural sweetness.

  4. Kampong Garden Wok
    Cashew nut, pimento

    Inspired by Southeast Asian kampongs, cashews and peppers bring warmth and colour to a dish that reflects a village spirit of living alongside nature as quiet guardians of the land.

  5. Sun-Harvest Chili Concarne
    Omni protein, tomato, kidney beans, jalapeño, taco

    A hearty blend of beans, tomatoes and warming spice inspired by sun-grown harvests. Comforting and bold, it celebrates our role as guardians who choose compassion on every plate.

  6. Honey Soy Glazed Tofu
    Honey-style soy glaze, enoki, nori, sesame

    Silken tofu glazed with savoury sweetness, paired with delicate mushrooms and hints of the sea. A meeting of woodland and coastal ingredients reflecting the interconnected ecosystems we are entrusted to protect.

  7. Fields of Freedom Biryani
    Plant-based protein biryani, papadam, raita

    Fragrant basmati rice layered with spices and plant-based protein, inspired by open grasslands and pastoral landscapes. A dish that honours animals roaming freely across fields.

  8. Wild Berry Meadow Cheese Cake
    Black currant compote, blueberry sorbet

    A refreshing dessert inspired by berries found along forest edges and garden hedgerows. A sweet reminder that nature’s smallest fruits sustain birds, wildlife and the delicate balance of life we are called to protect.
